What is Ube?
Ube is a purple yam originally from the Philippines. While it is a kind of yam, it is an even sweeter, more mellow taste than its other relative with a slightly nutty, vanilla taste. it has a tough, bark-like outer skin unlike the smooth skin of purple yam or taro. Most Filipinos can actually tell if the dessert is really made of ube or purple yam because there is a distinct difference in its taste.

While the ube has long been a staple in Filipino cuisine, it’s only made its way into mainstream U.S. culture in the last few years.
